I realize it has been a really long time since I posted a recipe. Lo siento.
I was wanting to make a really good/authentic mexican dish. I was talking to Alecks (who is from mexico) at work and he suggested I try making enfrioladas. I'd never heard of them and when he described them to me they didn't sound that good. Trust me..... they are money.
Ingredients:
Tortillas
2 chicken breasts
1 lime
Cilantro
Tbls chili powder
1/4 cup of Olive oil
1/2 table spoon honey
2 cans of black beans
Queso fresco
Sour Cream
Chicken Marinade
Mix together in a blender, half cup of cilantro, honey, chili powder, olive oil, juice from one lime, and salt to taste.
Marinate chicken for 24 hours.
Cook chicken in crockpot on low for 4-5 hours or until thoroughly cooked.
Enfrioladas.
Warm tortilla fill with 1/4 cup of chicken and cheese. Roll tightly and place seem side down in a greased glass pan. Cover with black beans. Sprinkle queso fresco on top. Bake in a 350 degree oven for 20 minutes. Garnish with sour cream.

Manicotti
I decided to make some delicious Manicotti this week. I love Italian food a lot, almost as much as I like Mexican food. This recipe is really delicious and will impress who ever you make it for. I love this recipe because it's really easy.
Ingredients:

- 1 pint part-skim ricotta cheese
- 8 ounces shredded mozzarella cheese
- 3/4 cup grated Parmesan cheese
- 2 eggs
- 1 teaspoon dried parsley
- salt to taste
- ground black pepper to taste
- 16 oz of homemade meat sauce (see lasagna recipe)
- 5 1/2 ounces manicotti pasta
- Cook manicotti in boiling water until done. Drain, and rinse with cold water
- Preheat oven to 350 degrees F
- In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, and salt and pepper. Mix well.
- Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
- Bake 45 minutes, or until bubbly.

Oreo Truffles
After making these during the Christmas season and being requested by several people to post the recipe, I decided to end my procrastination and finally put it up. These truffles are incredibly easy to make.... I mean UNBELIEVABLY easy, you'll see. This one is for you Staci.
In this recipe I used mint oreos, they turned out delicious. I've used regular oreos in the past and they also turned out amazing.
Ingredients:
Oreos ( I always forget to count how many I use, its about 2 1/2 sleeves)
1 brick of cream cheese
Baking Squares white chocolate 1 1/2 boxes (see picture)
Directiones:
In this recipe I used mint oreos, they turned out delicious. I've used regular oreos in the past and they also turned out amazing.
Ingredients:
Oreos ( I always forget to count how many I use, its about 2 1/2 sleeves)
1 brick of cream cheese

Directiones:
- Soften cream cheese in microwave for about 20 seconds.
- Put the oreos in a food processor or smash them in a bag until its oreo dust
- Mix oreo dust with cream cheese together
- Put the mixture in the refrigerator ( covered) for 30-45 minutes
- Melt chocolate
- Make balls out of the mixture, about golf ball size
- One at a time put the balls into the white chocolate and coat them.
- Place on wax paper and put back in the fridge for another hour

Pizza Dip
This is one of my favorite dips, in fact I made this dip 3 times in the past 2 days. Each time it was eaten very quickly and I was asked for the recipe. This is the second recipe I have stolen from my sister April. Its a good one.
Ingredients:
1 block of cream cheese
1 teaspoon dried italian dressing mix
2 cups mozzarella cheese
1/3 cup fresh parmesan
8 oz pizza sauce
1/4 cup chopped red pepper
1/4 cup chopped green onion

- Mix the dried seasonings in with the cream cheese spread in a 9x9 pan.
- Top with half of the cheeses
- Spread on pizza sauce
- Top with remaining cheese and chopped red pepper and green onions
- Bake at 350 for 15-18 minutes
- Serve with slices of a baguette

Western Potato Rounds
This is another great appetizer that is super easy to make yet very delicious. This recipe was introduced to me by my sister April. This works great for any get together, we made about 30 and they were all gone in about 5 minutes.
Ingredients:
2 large potatoes unpeeled
1 cup shredded Colby jack cheese
6 bacon slices cooked and crumbled or just buy real bacon bits
green onions chopped ( I didn't have any green onions, but they still turned out amazing)
barbecue sauce
Directions:
1. Preheat oven to 450
2. Slice potatoes into 1/4 inch slices
3. Spray with oil
4. Bake 20 minutes
5. Take out of oven top with, bbq sauce, cheese, bacon,onions
6. Put back in oven bake 3-5 minutes until cheese is melted
